I decided to begin blogging my recipes. I have shared with friends and neighbors for years and decided this would be an easier way for me to share my adventures in the kitchen.

I posted this pic of my extended family. They are my inspiration. My Louisiana roots continue to inform my cooking. I have been lucky to have lived in various regions of our country and have embraced the best of what each region has to offer our communal table.

I am a former teacher, now stay-at-home mom, that loves to prepare and share food. My dishes are simple and tasty. Come along with me and lets explore the exciting world of spices, herbs, and great food.

This is my favorite Chicken Salad 2010.

One head of Napa Cabbage (finely shredded)
Three green onions chopped fine
A palm full of fresh basil chopped fine
A palm full of parsley chopped fine
A palm full of sliced raw almond
One Gala apple chopped in fine squares
Two chicken breasts (may be taken from a pre-baked chicken or cooked boneless, skinless)
Sliced thin

Dressing:

1/4 cup of light Olive Oil
1/3 cup of Rice Vinegar
Generous dash of Balsamic Vinegar
1Tbs. of Chicken Boullion
1 packet of Truvia sweetener
1 generous dash of Sesame Oil

This is the basic salad. You can play around with the vinegars to suite your taste. Pear infused balsamic instead of Rice Vinegar is delicious. Dried apricots or mangoes instead of the Gala apple are also great.
